Packed with protein-rich chicken, crunchy veggies, and a zesty kick of flavor, this light and refreshing salad is the perfect meal prep solution. Ingredients
~16 oz shredded lettuce/cabbage mix
~16oz pre-grilled chicken, chopped (I use the chicken skewers from costco, so easy!)
~1 can black beans, rinsed and dried.
~1 can of sweet corn, drained
~10oz cherry tomatoes, quartered
~Chopped red onion
~Chopped cilantro (optional)
~5oz fat free shredded cheddar cheese
~Light dressing of choice (around 50 cal/serving) I like “Simply Southwest Ranch”
~2.5 hard boiled eggs (link IP HB eggs recipe)
~Low sugar BBQ sauce (30cal or under per serving is ideal-I use Stubbs).
~Tortilla strips, onion straws, or other topping of choice (not in nutrition facts)
Assembly Directions
1.Add 3oz of lettuce mix to each container
2.Add 3T low sugar bbq to a bowl and add the chopped chicken. Combine until chicken is coated in sauce.
3. Assemble your bowls. The amounts above will make 5 bowls. Add 3oz chicken, 2oz cherry tomato, about 1.5 oz each of black beans and corn, 1oz cheese, 1.5oz red onion, sprinkle of cilantro, 1/2 hard boiled egg
4. Before serving add 1 serving of your dressing of choice (I like SW Ranch or I make my own bbq ranch with light ranch and low sugar BBQ)
5. Top with 1 serving (7g) of tortilla strips or other crunchy topping of choice. (Optional)
