Ingredients:
🔹 2-2.5 pork tenderloin
🔹 Large can pineapple chunks in juice
🔹 1/2 cup coconut aminos
🔹 2 bags cauliflower rice stir fry
🔹 2 cups cooked white rice
🔹 1 bunch of green onions, chopped
🔹 2 eggs, 2 egg whites
Instructions:
✅ Cut the pork tenderloin in chunks, place in the instant pot and cover with the canned pineapple chunks and juice and add coconut aminos.
✅ Place on manual for 15 minutes and quick release when done.
✅ Heat a non stick skillet on medium heat. Wisk eggs and egg whites together and cook in the skillet like you would an omelette but do not fold. Once done, remove and let it cool. Use a pizza cutter to cut the egg into small squares.
✅ Turn the skillet to medium high. Throw in the bags of stir fry and cook until heated through and the excess water is gone.
✅ Remove pork from IP and shred (the kitchenmaid works the best for this!)
✅ Turn IP on sauté and stir the liquid occasionally for 15-20 min or until reduced down.
✅ Assemble each bowl: add 1/3 cup (or desired amount) white rice, 1 cup cauliflower rice stir fry, a few chunks of pineapple, diced egg, green onions, and shredded pork (I added 3 oz). Top with reduced sauce from instant pot. Add the lid to your meal prep container and shake to combine. Top with EBTB seasoning.
