Ingredients:
1 cup Peanut Butter or Sun Butter
46g or 3Tbsp Egg White
3 scoops or 33g vanilla collagen protein (I use this brand)
2 tsp Vanilla Extract
1/4 cup Coconut Flour (this brand is organic and awesome!)
1/2 tsp liquid stevia (optional)
Directions:
Preheat oven to 350 degrees.
Add all ingredients to a medium sized mixing bowl and stir to combine.
Once mixed well, use a medium spoon to spoon out the dough and roll into 19 balls (about an inch in diameter) and place on a non stick cookie sheet.
Using a fork, flatten each cookie using a criss cross pattern.
Bake in the oven for 8-10 minutes. Allow to cool and use a spatula to transfer to a plate as they can be a little crumbly.
