If you’ve tried my method of hard boiling eggs in the #instantpot this meal is super easy, quick, delicious, and healthy! Traditional egg salad is much higher in fat and lower in protein. Try this lightened up version that has a healthier dose of protein per serving. I’m a huge fan. 🙌 Let me know if you give it a try!
Ingredients:
🔹 2 hard boiled eggs, diced
🔹 2 hard boiled egg whites, diced
🔹 1 tablespoon light olive oil mayo
🔹 1 stalk celery, finely diced
🔹 10g mustard (about 2 tsp)
🔹 15g (one tablespoon) dill relish
🔹 1/8 tsp salt
🔹 1/8 tsp pepper
🔹 1/4 tsp dried dill
Directions:
✅ Mix all ingredients together.
✅ Taste for additional seasonings and add as desired.
I love serving this over a bed of lettuce with crackers or 🥨. 🤤
