There are few things more delicious and comforting than a warm slice of banana bread with butter. 🍌🧈
Unfortunately, banana bread isn’t what I would consider “heathy” or something to eat when you’re counting calories but this lightened up version does not disappoint! We started with Martha Stewarts “Best” banana bread recipe and made some tweaks to lighten it up significantly.
The original recipe is around 400 calories for 1/8 loaf and this lightened up version clocks in at 199 cals and 7g protein per piece! 🙌
Next time you have some extra bananas sitting around give this a try…I think you’ll be impressed!
INGREDIENTS:
🔸 1/4 cup butter, softened
🔸 1/2 cup unsweetened applesauce
🔸 1 cup (minus 2 tablespoons) monk fruit sweetener
🔸 92g (6T) egg whites
🔸 1 1/4 cup flour (I used whole wheat)
🔸 1 tsp baking soda
🔸 1tsp salt
🔸 300g (3 large) overripe bananas, mashed
🔸 1-5oz container vanilla @oikosprotein triple zero greek yogurt
🔸 1 tsp vanilla extract
🔸 1/2 tsp cinnamon
DIRECTIONS:
✅ Preheat oven to 350 degrees
✅ Spray a loaf pan with non stick spray.
✅ Mix together flour, baking soda, monk fruit, cinnamon and salt.
✅ In a separate bowl mix mashed banana, yogurt, butter, vanilla, egg whites, and applesauce.
✅ Fold wet and dry ingredients together only until combined. Do not over mix.
✅ Place in greased loaf pan and bake for 55-60 min until a fork inserted in the center comes out clean.
