I’ve got a new variation on the baked oats that changes up the flavor a bit and it's delish!
I’ve been eating the berry baked oats non stop for breakfasts lately so I wanted to try a different flavor combination. I had a lemon sitting around with no use for it so I thought “What the heck!” and it turned out delish!
INGREDIENTS:
▪️3.5 cups frozen blueberries (microwaved to soften)
▪️3T monk fruit sweetener
▪️1/4 cup sugar free maple syrup (or you can use regular but it will change nutrition info below)
▪️4oz light or greek cream cheese (softened in microwave)
▪️1 3/4 cups almond milk
▪️150g egg whites (10T)
▪️2 scoops vanilla UMP protein powder (or any casein/whey blend)
▪️3 cups oats (I used old fashioned)
▪️3 T lemon juice
▪️ Lemon zest (I like a lot!)
INSTRUCTIONS:
▪️Preheat oven to 350.
▪️Spray a 9X13 pan with non stick spray.
▪️Add 1T monk fruit to the microwaved berries to sweeten (to taste).
▪️Mix the oats and protein powder together in a large bowl.
▪️Add in egg whites, maple syrup, almond milk, lemon juice, and 2/3 of the berries together with the dry mixture. Stir to combine.
▪️Add to the 9X13 pan.
▪️Add the softened cream cheese and the remaining 2T monk fruit to the remainder of the berries and mix well. Spoon the cream cheese mixture on top of the oat mixture and spread it around.
▪️Zest lemon over top of casserole dish
▪️Place in the oven for 45-50 minutes or until the center is cooked through.
▪️Cut into 6 pieces once cooled.
