Honey Lemon Vinaigrette


I had some requests for this recipe so I figured I’d better type it up! I was searching for a way to recreate a delicious salad I had on vacation that used a champagne vinaigrette. Apparently you can’t get champagne vinegar at Kroger so I improvised and came up with my own that I think is delicious and just as good (if not better!) than what I had. I used this on a salad with arugula, pepitas, roasted sweet potato, granny Smith apple, goat cheese, and beets. Add a little grilled chicken and you have a complete meal!⁣

INGREDIENTS:⁣

🔹1/3 cup white balsamic vinegar⁣

🔹2 Tbsp honey⁣

🔹1 Tbsp lemon juice⁣

🔹1 tsp dijon mustard⁣

🔹1/3 cup olive oil

🔹Salt and pepper, to taste⁣

Add all ingredients to a mini blender and blend until it looks creamy. Use to dress your fav salad. Shake or stir well before pouring. ⁣

Makes 7 2TBSP servings⁣
