The Perfect Summer Side: Tangy, Easy Vinegar Slaw

Craving a Cool, Crunchy Side Dish? Look No Further Than This Easy Vinegar Slaw! This vinegar slaw recipe is the perfect summer side dish. It's quick and easy (the easiest, actually!) to whip up, packed with crisp cabbage and colorful veggies, and tossed in a tangy, flavorful dressing that's anything but boring. It's a true crowd-pleaser and is sure to be a hit at your next barbecue!


Ingredients

½ half large head green cabbage, shredded thinly in food processor

½ half large head purple cabbage, shredded thinly in food processor

3-4 medium carrots, shredded finely in food processor

1 cup white vinegar

3 tablespoons olive oil

½ tsp black pepper

1 clove garlic, minced

1 tablespoon kosher salt 

1 tablespoon granulated monk fruit

¾ tsp celery salt

Directions: 1. Combine the first 3 ingredients in a large bowl or tupperware with a lid.

2. Combine dressing ingredients (the last 7) in a jar and shake well to combine.

3. Add ½-¾ of the dressing to the slaw and either cover and shake to combine well or toss well. 4. Refrigerate for a few hours to let the flavors meld.

5. Before serving toss and if they cabbage has sweat a lot you can drain, otherwise taste and refresh with a bit of the remaining dressing. Add additional salt and pepper to taste if you’d like.

6. Serve chilled.


Notes: This slaw is delicious with pulled chicken with bbq seasoning or it would be a great side for the sloppy joes or other grilled meat. It is super simple to prepare and makes a great side dish to take to a summer get together! It is well liked and always goes over well!
