Starting your day off right is crucial for setting the tone for the rest of your day. A nutritious and delicious breakfast can provide the energy and focus you need to conquer your day. But are you tired of the same old breakfast routine? This easy 5-day meal prep is the perfect solution. Not only will it save you time and stress during busy weekdays, but it will also ensure that you're fueling your body with the nutrients it needs.

hash browns in glass baking dish

Ingredients:

  • 8 eggs

  • 12 chicken sausages

  • 1 container of egg whites 16oz

  • 1 large package frozen shredded hash browns

  • Avocado oil spray

  • Seasonings of your choice (salt, pepper, garlic powder, etc.)

  • Optional: Veggies of your choice (like bell peppers, onions, or spinach)

Instructions:

  1. Preheat the oven to 400.

  2. Spread the entire bag of frozen hash browns in an even layer on a baking sheet lined with parchment paper. Spray with a little avocado oil and season with salt and pepper.

  3. Allow hash browns to cook in preheated oven for about 20 minutes and then flip them. Hash browns are done when they're crispy on both sides.

  4. While the hash browns are cooking, make your eggs. Over medium high heat, cook 8 whole eggs and the entire carton of egg whites. I prepare my eggs scrambled for this dish.

Tip: This is a great time to add veggies if you want to beef up the nutritional profile!

  5. Heat 12 chicken sausages in the microwave according to package directions. Cut into coins when finished cooking.

Assemble:

  • Place the eggs and chicken sausage in the bottom of a 9x13 dish. Add your crispy hash browns on top. Enjoy!
