Easy Mojo Criollo Pork

I am always a fan of having some yummy pre-cooked protein in the fridge so you can quickly assemble meals for the week. This is a go-to recipe in our house and it’s the base of my healthier Cuban wrap recipe. All you need is two ingredients and a crock pot! You can add this shredded pork to salads, tacos, wraps, sandwiches, or over rice. The possibilities are endless! My favorite is the Cuban wrap but I’d love to hear what you do with it! ⁣

INGREDIENTS⁣

🔹2-3lbs pork tenderloin⁣

🔹2-3 cups mojo criollo marinade (purchase from any grocery store)⁣

🔹optional: salt and minced garlic ⁣

DIRECTIONS:⁣

✅ Cut pork into 2-3 chunks. Place in the bottom of crockpot.⁣

✅ Add 2-3 cups marinade to the crock pot.⁣

✅ place crockpot on low for 7 to 8 hours.⁣

✅ Flip pork every few hours if you are able. ⁣

✅ You will know it is done when it easily shreds with a fork. This meat is very tender when cooked properly. ⁣

✅ Remove from the crockpot and shred with two forks. ⁣

✅ Add some of the marinade back to the pork to keep it moist and stir.⁣

✅ Store in the fridge for up to 5 days.
