Easy Meal Prep Egg and Sausage Breakfast Sandwich

Here’s a super quick and easy meal prep recipe for busy mornings! You can prep this on Sunday and have a quick and healthy breakfast ready for the week.⁣ It doesn’t get much easier!

Look, I get it. You’re busy in the mornings. You have to get yourself up and ready, the kids ready, and out the door. Breakfast is often an afterthought. But let’s be real… You need to start your day with some fuel and set yourself up for success the rest of the day.


When we skip breakfast we often get overly hungry and it can lead to poor choices that can waterfall down through the rest of the day.⁣

This sandwich has a good dose of protein, carbs, and a little fat to keep you satisfied. Versions of this recipe have been on repeat for years in our house. Give it a try and let me know what you think! ⁣

🍳INGREDIENTS🍳 ⁣

🔹 Egg whites (552g or 2.25 cups)⁣

🔹 6 whole eggs⁣

🔹 15 pieces precooked chicken sausage, cut into coins.⁣

🔹 6 whole wheat sandwich thins or thin whole wheat bread⁣

🔹 salt, pepper, any other herbs or seasonings you want. ⁣

🍳DIRECTIONS🍳⁣

✅ Preheat oven to 400°⁣

✅ In a large mixing bowl, combine egg whites and whole eggs. ⁣

✅ Pour into 9x13 baking dish⁣

✅ Sprinkle chicken sausage coins throughout (evenly distributed) ⁣

✅ Add salt, pepper, and any other herbs or spices you’d like⁣

✅ Bake in oven for about 20 min or until cooked through. ⁣

✅ Remove from oven and let cool.⁣

✅ Slice into 6 pieces.⁣

✅ Store in the fridge with paper towels in between pieces for up to a week.⁣

✅ When you are ready to consume toast your thin bun.

✅ Microwave egg portion until warmed and place on thin bun. You can add cheese if you’d like but as is this sandwich has 30g of protein!⁣
