Creamy Mexican Slaw

This slaw is super quick to throw together made with basic ingredients you likely have in your fridge. It's refreshing & tangy with a little bite from the sweet & hot jalapenos. It's super macro friendly and great as a side or to top your tacos! Give it a try!



Ingredients:

  - 16 oz thinly sliced or shredded red or green cabbage

Dressing Ingredients:

  - 1/2 cup plain 2% Greek yogurt

  - 2 tbsp lime juice

  - 1/2 tsp cumin

  - 1/2 tsp sea salt

  - 1/4 tsp garlic powder

  - 1/4 cup chopped pickled jalapenos (sweet & hot recommended, adjust based on heat preference)

  - 1/2 cup chopped cilantro

  - 2 tbsp maple allulose syrup (can substitute honey, but will increase carbs)

  - 1/4 cup chopped red onion (optional)


Directions

1. Place the shredded cabbage in a large container with a lid.

2. In a separate bowl, whisk together the Greek yogurt, lime juice, cumin, sea salt, garlic powder, and maple allulose syrup until smooth.

3. Add the chopped pickled jalapenos to the dressing mixture and stir to combine.

4. Pour the dressing over the cabbage. Add the chopped cilantro.

5. Cover the container with the lid and shake well until everything is evenly incorporated.

6. Taste and adjust seasonings as needed.

7. Refrigerate for at least one hour to allow the flavors to meld.

8. Serve alongside or on top of tacos, or in a taco bowl.
