Cauliflower Pizza Crust


One of my ALL time favorite foods growing up was pizza!  I don’t know about all of you but if pizza was an option for breakfast, lunch, or dinner there were NO other options ha!  I mean how can you not love the cheesy meaty goodness that is a pizza pie?  So needless to say giving up pizza was a tough one for me… until now!


Cauliflower has become my new BFF, Best FOOD Friend!  Cauliflower is an amazing food not only because of its nutritional value but because it’s so diverse.  There are so many different things that you are able to do with it. Who knew??? Not only can you just simply roast the whole head with some seasonings and spices for a delicious and dramatic looking side, you can make mashed cauliflower for all of us who miss having a big heaping side of mashed potatoes during the holidays, and my very favorite is caulirice! No, it doesn’t taste exactly like “real” rice but it’s a great sub that is much lower calorie and lower carb as well!

Eating cauliflower is like winning the antioxidant and phytonutrient lottery. It’s packed with vitamin C, beta-carotene, cinnamic acid, and much more. Antioxidants are nature’s way of providing your cells with adequate defense against attack by reactive oxygen species. As long as you have these important micronutrients, your body will be able to resist AGING, you hear that ladies edible fountain of youth!, that is caused by your everyday exposure to pollutants, chronic stress, and more. If you don’t have an adequate supply of antioxidants to help get rid of free radicals, then you can be at risk of oxidative stress, which leads to accelerated tissue and organ damage.  That’s not why you’re here though, I know.  You’re here for the promise of a delicious nutritious recipe, and I keep trapping you in to reading a nutrition article.


Here it is.  What you came for.


Cauliflower Pizza

Prep time:  10 mins Cook time:  25 mins Total time:  35 mins Serves: 4


Ingredients

  • 1 Large head Cauliflower

  • 2 Tbsp Italian Seasoning

  • ¼ Tsp Salt

  • ½ Tsp. Garlic Powder

  • 4 Tbsp. Almond Meal

  • 1 Tbsp. Extra Virgin Olive Oil ( Or another oil of choice like Avocado Oil)

  • 1 Egg

  • 1 Tbsp. Egg White

Instructions

  1. Preheat oven to 450 degrees

  2. Use a food processor with the rice attachment to rice cauiliflower

  3. Steam riced cauliflower until fork tender

  4. Remove cauliflower and squeeze out ALL excess liquid with a cloth (CAREFUL EXTREMELY HOT!)

  5. Once liquid removed combine all ingredients in a bowl and mix well

  6. Place mixture on a cookie sheet lined with parchment paper and shape

  7. Bake in oven for 15-20 minutes (But what about the toppings??? Don't worry that's coming up next!)

  8. Remove crust from oven and add all those delicious pizza toppings you have

  9. Turn oven to broil

  10. Return topped pizza to oven to broil until toppings melted and perfect

  11. Remove pizza from oven let cool a bit and cut

  12. Most importantly is this last step... ENJOY!!!
