š¹Three multicolored bell peppers, slicedā£
š¹1/2 sweet onion (about 4oz), sliced ā£
š¹1/2lb extra lean ground beefā£

ā Preheat the oven to 400 degrees.ā£
ā Add a tiny bit of non stock spray to a large skillet. Add the peppers and onions and sautĆ© until soft. Usually I add a little broth or water to help them cook/soften without adding extra fat. ā£make sure it all cooks off before you remove from pan because you donāt want any extra liquid in with the eggs.
ā Sprinkle a little taco seasoning in the skillet and stir to combine. ā£
ā Place the cooked peppers & onions in a 9x13 casserole dish sprayed with non stick spray.ā£
ā Return the skillet to the stove and add 1/2lb lean ground beef. Crumble, cook and add taco seasoning (approx 1/2 packet or a have a recipe on my feed that has all clean ingredients) ā£
ā Once the ground beef is cooked, sprinkle it in the casserole dish. ā£
ā Pour egg whites over the pepper, onion, and beef mixture. Top with cilantro and sprinkle with taco seasoning.ā£
ā Bake in turn oven for 25-30 minutes or until the center is cooked. ā£
ā Let cool and cut into 6 piecesā£
ā Serve topped with salsa and a sprinkle of cilantro if youād like! šā£
