There is NOTHING wrong with some awesome sweet potato fries (especially if they are fried in duck fat!) One of my favorite restaurants here in Louisville, Ky offers fries cooked in duck fat instead of the nasty vegetable or peanut oil that most restaurants fry in and they are DEEEEEELISH. However, we all know that if you are watching your carb intake because you are possibly trying to drop some body fat, I have an awesome alternative because you know what? Sometimes in life, you just need a fry. I hope you enjoy this recipe!
What is a Rutabaga?
A rutabaga is actually a root vegetable that is believed to be a cross between a cabbage and a turnip. Though they are a root vegetable, they are much less starchy than many other root veggies like potatoes and carrots. A medium rutabaga has about 24g of net carbs. That would make a LOT of fries. If you haven’t tried it before, you should give it a shot and let me know what you think!
Baked Rutabega Fries
A much lower carb alternative to potato fries!
Ingredients:
1 Medium rutabaga, peeled and sliced into fries
Salt and pepper or other seasoning of choice
Extra virgin olive oil (in spray form preferably)
Instructions:
Preheat oven to 425 degrees
Spray a non stick cookie sheet generously with EVOO (I love my misto for this!)
Place the raw rutabaga fries on the cookie sheet (leave some space between them)
Spray the top of the fries with EVOO to coat them lightly.
Top with salt, pepper, or other seasonings of choice.
Place in the oven for 20 minutes. Flip after timer goes off and place back in the oven for another 20 minutes or so until golden brown and crispy.
